    I've seen this while driving

The students argue that there would be no sign of stars due to the Doppler Effect. In this case, the Doppler blue shift would occur. This is a phenomenon caused by a source of electromagnetic radiation, including visible light, moving toward an observer.

Since this effect implies that the wavelength of electromagnetic radiation would be shortened, the light would shift out of the visibility spectrum and into the X-ray range. Therefore, the Millennium Falcon crew would see only a central disc of bright light as Cosmic Microwave Background Radiation shifts into the visible spectrum.
But yeah. It looks like a car coming towards you in a fog. That's easy to do.

But, you would probably see stars if that car were to hit you.

A car has two headlights. Look around your feet, you're standing on a railroad track.
