    Question about a Mexican Dish

    When I lived in New Mexico, I used to go to a little cantina every morning near Lordsburg. An older Mexican Lady was the waitress, cook and owner. All by herself. Every morning I had the same breakfast. I loved it and have been trying to duplicate it for years.She called it Mexican Eggs.

    It was a bed of Hash browns with 3 eggs on top. Covered with a sauce that had hamburger, chorizo, onions and Green Chilies that swam in a gravy type substance that was thick like gravy but almost clear.

    Anybody have any idea what this is, and how to cook it?

    Can't help you with the recipe, but here's my favorite Mexican dish:

    Never heard of it. Using "hash browns" & "hamburger" it's very doubtful it's an authentic Mexican dish and probably something she concocted up. Wet Mexican eggs are always served on tortillas. The best I ever had in Mexico were Huevos Rancheros at the mercado on Isla Mujeres, and they were so good it bordered on insanity.

    Green chili enchilada sauce poured on top. Add cheese if you want, or my favorite, avocado. Fast and cheap.

    Eggs over medium please.

    Mexican wet eggs are ALWAYS sunny side up, served on tortillas with hot (temperature) chile (relatively thin) salsa poured over them to cook the slimy, white, top of the eggs. WHENEVER this is not the case you are being bullshitted by someone who is trying to sell you Americanized crap.
