When I lived in New Mexico, I used to go to a little cantina every morning near Lordsburg. An older Mexican Lady was the waitress, cook and owner. All by herself. Every morning I had the same breakfast. I loved it and have been trying to duplicate it for years.She called it Mexican Eggs.

It was a bed of Hash browns with 3 eggs on top. Covered with a sauce that had hamburger, chorizo, onions and Green Chilies that swam in a gravy type substance that was thick like gravy but almost clear.

Anybody have any idea what this is, and how to cook it?
