    Paella

    Anyone else like Paella? Love it! I like it mixed, chicken and rabbit topped with shrimp. Well, I set out to make some Paella today but was out of saffron and Evoo QQ! Anyway, will make it tomorrow. Wont be the same as Pilars but will be something lol. She still tells me I need to try her mothers Paella that it is el fantastico!

    If you like Paella as you know it can be made many different ways. Anyone care to share their personal fave?

    Mine is Chicken and rabbit (topped with shrimp/prawn)
    Red peppers and fresh green beans
    Tomato and garlic
    Saffron, salt, and pepper
    and ofc bomba rice

    Only thing I know about paella is, to be authentic it has to be cooked over a wood fire to get the smoke flavor.

    It's like a soup made from seafood and some kind of meat, including sausage, then rice is added to soak up the liquid. It's the national dish of Spain.

    I've tried paella a few places and in all but one of them it was DRY, DRY, DRY. Why do they do that? Or is paella supposed to be bone dry? One place, though, made it wonderfully and became a habit. It came with half a lobster on top (and was usually served the day after "Lobster Day".)

    I guess I'm confusing it with a pilaf dish with shrimp and scrambled eggs. Some tomato and sweet onion too.

    Lol, Ive only had it the few ways Pilar has made it. However I do know that Spanish and Turkish Paella differ. Also that there are like death feuds over how it is made from family to family lol. For example, put chorizo in it and Pili will likely cut off your face!
