why do some forums always revert back to daily?

You need to set your default thread display options.

At the top of the index page, "Forum Actions" ... "General Settings" ... under "Thread Display Options", set your "Default Thread Age Cut Off" to "Show All Threads" instead of the forum default. Don't forget to click the save button at the bottom of the page.
