Only sissies can't chop onions with a good chef's knife. My sole concession to modernity is that I like to use one of those flexible, plastic sheets on which to do the chopping -- makes it easier to shuffle the onion mince (or dice) into whatever vessel is required.
My xyl (who is an admitted sissy) has one of those chop-a-slop gadgets. It mashes the onion mince, making a wet mass of mashed bits laced through with strings and strips of onion skins (the very thin membranes between the layers). One hell of a mess.
