    In this case, it doesn't affect the quality of the cheese. It's merely a method of mechanizing a process so it can be done in hours rather than days. Imagine producing six hundred pounds of grated Asiago cheese using nothing but a knife and a hand grater. The pneumatic slicer cuts up twenty pound blocks into roughly one-pound chunks that will go into the industrial-sized cheese grater (which is a lot scarier than the pneumatic slicer, lemme tell ya).
