View Full Version : Took up canning as a hobby

Moving to North Carolina has some unexpected advantages. First we moved into a house that has a big pantry. Second we made friends with a neighbor who's husband is a farmer and knows where to get cheap locally grown Vegetables. Third we do live in farm country. So the wife is into canning in a big way. We bought a pressure cooker and all the paraphernalia to can to our hearts content. We have done green beans, tomatoes, spaghetti sauce and cucumbers (pickled). In the fall we hope to do apples. Using the pressure cooker seems pretty easy, but I always have a nagging fear that it might blow up.

Never let the thing cook unattended or you could end up with beans on the ceiling. True story, guess how I know...

^my parents had that happen with pea soup.... nice green kitchen though, spectacular sight, took them weeks to clean it though....;))

That is awesome! I canned pickles a few summers ago. They were the best pickles I have ever had. The one jar lasted two days.

The best peanut butter and pickle sandwiches ever...

I plan to do some more pickling this year. Just need to head to the farmers market and get some pickling cucumbers.

BTW, NC is one of the states in the Union I would love to live in. Especially the area between Ashville and the Smokies.

OK, Thanks for the insight.The instructions do mention something about being careful when cooking beans, peas or gunpowder. That I know.

We used to do this back in the 60s. Fruits, vegetable but I wanted mom to do a jar of hot dogs.

She said no.
