Why are the Brits so much smarter than us?

They eat stuff like this:

1 tablespoon beef drippings or 1 tablespoon cooking oil
1 1/2 lbs chuck steaks, cut into 1 inch dice
1/2 lb ox kidney (or lamb's, trimmed and diced)
12 ounces puff pastry
2 onions, chopped
3 carrots, peeled and cut into rough dice (5/8 inch)
butter
4 large flat mushrooms, cut into thick slices
2 tablespoons flour
1 teaspoon tomato puree
1 bay leaf
1 pint veal stock (or water and stock cube or granules) or 1 pint beef stock (or water and stock cube or granules)
Worcestershire sauce
salt and pepper
1 egg, beaten, for glazing

1.4kg eel, cleaned and cut into 5cm lengths 1 small onion, quartered 75g onion, thinly sliced 4 small bayleaves 4 sprigs parsley 1 tbsp parsley, finely chopped 4 tbsp butter 240ml pale, dry, sherry 1/4 tsp freshly-grated nutmeg 1/2 tsp sea salt 1/8 tsp cayenne pepper 3 tbsp plain flour 4 tbsp fresh lemon juice 3 hard-boiled eggs, quartered 1 batch rough puff pastry 1 egg yolk whisked with 1 tbsp double cream

Excellent, I've perplexed a few Americans by suggesting our best recipes. By the way, I would have this with short-crust pastry, anything else is too greasy. Forget the eel pie which appears later, that's a Cockney speciality, cor blimey!

Mum made the Pennsylvania Dutch version, kidney pie with bacon... YUM! Another tasty dish was liver, onion and bacon. Mmmm bacon, bacon, num num num BACON!!! I won't touch eels in any form, no octopus and squid is FISH BAIT!

I've had eel and squid as one of 32 courses at my first wedding. Excellent when done Cantonese style. Octopus a/k/a calimari Italian style, Yum! A big surprise was shark and jellyfish. Both were unexpectedly good. I'll try almost anything once. But I won't do THAT! (Prarie oysters).
