View Full Version : Cooked my first meatloaf, it is very good

After watching shows like Iron Chef and Chopped, I ventured into my own meatloaf experiment. The result was a moist, tasty dinner, with plenty of leftovers to reheat.
Preheat oven to 385 degrees
1 egg, beaten
mix with a few splashes of Worcester sauce
add 1 teaspoon or so of salt
add 1 teaspoon of black pepper
add two tablespoons of brown sugar
1/2 red onion and 1/2 green pepper - food processor, until mushy, add tio above
add 1 - 10oz can of diced tomatoes with chiles.
add 1/2 cup of oatmeal
mix well
add 1.25 pounds of mixed ground beef/port
Mix all together.
Pour into loaf pan, squirt a little bit of ketchup, smooth on top, spash some hot sauce.
Bake for an hour.
Done... easy...
Paul, if you've been watching the original Japanese version of Iron Chef, I would expect you to include sweetfish innards or some other equally bizarre item in your meatloaf.

Paul, if you've been watching the original Japanese version of Iron Chef, I would expect you to include sweetfish innards or some other equally bizarre item in your meatloaf.
Wouldn't that be like anchovies on pizza?

When I make meatloaf, I also throw in all the vegetables in the fridge about ready to turn. If it is substantial, I end up with a veggie loaf with meat.

Sarah made lamb/sausage meatloaf last night. It was YUMMY.
I cooked up an egg scramble this morning using part of the meatloaf leftovers.
She didn't complain. At all...

I like to make salmon loaf with pumpernickel bread and oatmeal.
Leftovers are legal, of course. I've put eggplant in it, yummy.

That does sound good. Eggplant too.
Next time (it will be soon...) I will use A1 steak sauce instead of ketchup. The diced tomatoes were perfect in the meatloaf, as it provided a tangy taste. The ketchup is too much tomato. The oatmeal is preferred over bread.

Better Meatloaf

add two tablespoons of brown sugar ... not needed
1/2 red onion and 1/2 green pepper - food processor, until mushy, add tio above
add 1 - 10oz can of diced tomatoes with chilies, including the juice.
add 1/2 cup of oatmeal
mix well
add 1.25 pounds of mixed ground beef/port
Mix all together.
Pour into loaf pan, squirt a little bit of ketchup, smooth on top, spash some hot sauce.
lightly coat top with BBQ sauce
Bake for an hour.
Done... easy...

Janet, that sounds just awesome!!! Lamb is a favorite around here, really hard to find though, and REALLY expensive when you do.
What kind of sausage went in it?

Take the meatloaf sandwhich, put a dollop of mash potatoes on it, along with a dollop of BBQ sauce. Try that one.
Yes....some Meatloaf is much better once its cooled off a bit. ;)

Hey Scott, long time no see.
Well... I go through periods of inactivity but then I come here and realize how much I miss this place!
And no, that avatar picture is not Photoshopped! It is an actual frame from a Three Stooges episode I have saved on my computer. I wonder how Larry managed to slip that one by the sensors???
