Maybe it's me, but the market for new production VHF/UHF FM rigs just doesn't look all that good right now. I don't need APRS, crossband repeat, anything like that. One frequency at a time is fine.

I like the commercial-grade ones Icom and Kenwood have (the V8000 and TM-281A, respectively). Problem is, they don't have an equivalent for 70cm in a ham-ready version :(

If you were limiting yourself to new models, where would you guys look (either dual band, or separate radios)? Used is an option if nothing else looks appealing, but I'm trying to stay new for now.

If you only need one frequency at a time, I'd look at the Icom 208, or the Yaesu 7900.

For a handheld, Yaesu VX-6R. Waterproof, covers 2/222/440 and although menu driven is a bit easier to use than the 7 or 8.
