What is the trick with frying the plantains? I cut them up, fried them with a touch of garlic and they were still sticky and would not mash correctly. Any help would be appreciated.

Are you using oil (vegetable, coconut, motor)?

2 ripe plantains
Vegetable oil for frying

Choose plantains with some yellow color on the skin. Peel. Slice diagonally, into about 1/2 inch thick pieces. Set aside.Heat a large skillet. Cover bottom of skillet with vegetable oil. When oil is hot (about 350 degrees) add plantain slices and cook over medium heat until lightly brown on first side. Turn and cook until lightly brown on second side. Watch carefully. Do not overcook. Remove from pan when lightly brown on both sides. Drain on paper towels before serving. Makes 6 servings. Cooking time 5-10 minutes.

Vegetable oil. I see what went wrong now. The other recipe said to cut them into tiny pieces. Thick slices will make for better smashing.

Thanks

I'd use a Puerto Rican woman from Chico California.

Hey, I used to live in Chico. There aren't very many Puerto Ricans there—what's her name? I might know her.
