I got one of these back during the summer,

Mine is identical to the blue one with the cart.

Took a while to get used to putting food in,and doing nothing at all for up to 12 hours.

2 chimneys of charcoal started in the morning will still be 225 degrees the next morning.

I had the BBQ Guru option installed(essentially a thermostat with fan) and cooking out is about as exciting as using your oven.

Also found a meat temp probe at Lowe's with a remote that will wake me up when my food is ready :)

My dad made ours. We also made a Spit with pit out of fire brick when I was a teen.

I know it looks small,but I was able to cook prime rib for 75 people for new years on it.
It's normal load is much smaller.

Ever hear of using an old refrigerator as a smoker ? My Dad knew a guy from work who was heavy into smoking meats who used old refrigerators. He would strip out all the plastic and electrical stuff and just use the metal shell and frame. The guy swore by them and said other smokers use them as well. In any event he gave us a smoked bacon that he made it was awesome.

Tough on the compressor.

The compressor is no longer in the refrigerator. All the plastics, wiring, electrical stuff is removed before its used for smoking.

Nah, she survived, but at least we have a point at which we're pretty sure the drain bamage occurred.

I didn't tell you why this guy was into smoking meats. He smoked meats because he hated his wife. His wife's family smoked meats and he wanted to show that he was a finer smoker than they.

Anyone here ever grill a pizza?

I got a nephew on the wife's side of the fam damily who stayed here with his folks for a few days when his Grandma died several years back. Kid's got a bit of a restaurant background and once aspired to chefdom (Texan, too). He insisted we try this. Steak pizza, on the outdoor grill. The steak part was pre-cooked in the kitchen. Or maybe on the grill, I forget. I was dubious, but drove him to the store and bought all the ingredients he picked out. He cooked. Crust was Boboli, I swear.

Probably the best damn pizza I ever et.

Yep. Just toss the pizza stone on the grill, let it warm up a bit, drop the pizza on it, close the lid and check it after 10 minutes or so if it's a frozen slab of crud, a bit longer if it's a tasty homemade job.

I make home made pizza dough, and my wife makes home made sauce. Roll the dough out add evo, sauce, cheeses, pepperoni, onions, and whatever else you like. As noted above, a pizza stone on the gas grill for 15 minutes or so prior, slide the pizza off a wood peel with corn meal on it, and VIOLA, a bit later the best pizza ever. You can also add some wood chips soaked in water, then laid on some tin foil, and set on a burner to add some some smoky flavor. Apple wood is very nice.

Nephew didn't use a stone; bare bread on bare fire thing. (Will look for pictures; think I have one.)
