You start a chili recipe in a 2 gallon pot. To bean or not to bean?
I bean, because without beans it's just another pot of Descuidado Joe.
When does a pot of chili go from chili to becoming stew?
Chili is stew--stew Tejas style. I don't bean myself, but have had much good beaned chili over the years. These days, though, the only chili I make is Puerco con Chile Verde. Simple, good, cheap. Let me know if you want the recipe.
I would say that a stew has more veggies and a broth based sauce over the tomato you find in a chili.
I bean my chili because that is the way momma did it.

Chili IS stew, Mexican style!
Adding beans is really a matter of choice but normally beans are added to make it last longer, a cheap extender for when times are hard, not something to be preferred.

I though you were a Mexicano yourself, Don Rudolfo. Can't be, though, because a real Mexican would never consider chili a Mexican dish. It's purely Tejas.

Love a good pot of chili BUT the weather lately (TO ME) calls for a hot bowl of Beer-Beef Stew slow cooked....

Yet somehow, you never hear anyone ever call a round flat pie with tomato sauce and cheese, a pizz-ah.
I just whipped up a big pot o'chili tonight.... MMMMMMMMMMMMMM. I use 3 beans (pinto, kidney, black). Stick a fork in me, I'm done!
Italian sausage, And lots of it. More beans the better. And i use V8 Spicy hot juice. You should kinda of make your chilli just like your bloody mary. Everyone likes it different.

I've tried the V8 idea but it left me feeling like it was watered down because I didn't want to cook V8 for a long time.

i just finished some chilli at work tonight. the wife put some up monday night in her new 16 quart pot with 5 different beans and ground venison. had it for supper monday, lunch yesterday and supper again tonight. if i could just find a way to bottle the gas i could run my car for a month on the gas i passed yesterday....lol

I toss in corn into the pot too... Just me, and I don't know too many others that do that. As for beans: Bean it. Pinto, Kidney, and Black beans.

Yum! I also like to use those hollow-penises and some sweet onion in the cornmeal to make hush puppies, which are also good with the chili. In addition to the pepps and oignons, add a tablespoon or two of hot paprika to the cornmeal batter. NO SUGAR. Deep fry by the tablespoonful, forming into balls.
