Great on chips or veggies:

2 bunces of fresh dill

2 large shallots

1 cup mayo

1 cup sour cream


Use only those tiny little leaves of the dill. I draw the bunch under a knife to scrape them off, then pick out all the stems that came off with them by hand. After that, chop them up very fine.

Finely chop the shallots

Mix the sour cream and mayo in a bowl, then add the dill and shallots. Adding them gradually will avoid making a mess.

Chill overnight.

It's OK just after being mixed, but aging in the fridge helps bring out the flavor.

In a pinch, dried dill from a bottle and scallions, or even onions can be used...but using fresh dill & shallots makes the best dip.
