I *think* this is courtesy of Alton Brown but I can't remember.

Ham-shank cut preferably
coarse grain mustard
dark brown sugar
bourbon
pulverized gingersnap cookies

No set amounts here...

Place ham in a roasting pan, score it in the usual diamond pattern. Cover with aluminum foil and bake for 2-3 hours at 250 (time depends on size) until temp is 130. Remove from oven. Brush ham with mustard, smoosh brown sugar all over it, sprinkle with bourbon, and smoosh ground gingersnaps on top. Turn oven up to 350 and cook for another 30 min to an hour, until temp reaches 140.

We had a loin from some type of beef animal, grapeleaves, rosted whole red potatoes, trimmed steamed asparagus with olive oil and butter, a lovely green salad with grape tomatoes tossled with olive oil and aged white vinegar, horseradish, parsley and minted yogurt, parsley garlic vinegar sauce, au jous, sourdough loaf, pumpernickel and wheat swirl loaf and salted and herbed olive oil.
