Apple Stuffed Porkchops with Apple Gravy
1 thick center cut porkchop per serving
Granny smith apples cored, peeled and sliced about 1/4 inch thick
whole wheat or millet flour
black pepper
seasoning salt
poultry seasoning
apple cider (if cider is not available you can use apple juice)
butter

Take the flour and mix in the seasonings

butterfly cut the porkchops stuff them with the apple slices, dredge the porkchops in the seasoned flour and place in a lightly oiled cast iron skillet.
Cook until almost completely done, take them out of the skillet and let them rest on a platter.
Place a teaspoon of butter into the skillet and add some of the seasoned flour, stiring until the flour is browned, add the apple cider (or juice) and stir until it starts to thicken, place the chops back in to the skillet and let them finish cooking in the gravy.
