Lobster Burrito
ingredients:
2 tbsp. Olive Oil, 1 Lobster Tail, cut in large dice 1/2 Yellow Onion, sliced thin 2 Tomato, sliced thin 2 Garlic Cloves, chopped 1 shot White Wine, 1 1/2 cup Heavy Cream, Pinch Chopped Cilantro, 2 large Flour Tortillas,
directions:
In a medium size saute pan, over high heat - add olive oil, garlic and onion. Saute about 2 minutes or until garlic and onion become opaque. Add lobster and tomatoes and cook about 4 or 5 minutes more or until everything starts to brown a little. Add shot of wine and reduce until pan is almost dry. Add heavy cream and reduce until thick (About 3 or 1 min.) remove from heat. Season with salt and pepper and toss in cilantro. Warm tortillas, add lobster mix to the center of the tortilla and roll it up. Reserve a little sauce to pour over the top.
Can also use crab meat
